cold dishes to leave on buffet

I am hosting a jewelry party in the middle of August. To keep things as simple as possible, I want to put out several light dishes for a dinner buffet ( could be entrees, salads, sides or a bunch of appetizers).

Do you have any ideas or recipes for something I can make early and refridgerate or cook and keep out for 2 hours?

you could make mini skewers of mozzarella balls and grape tomatoes.
also any type of bruschetta or crostini....i happen to love giada's pea pesto on top of crostini
another one i like sounds weird but its sooooo good:
spread goat cheese on crostini then place halved grapes on top and sprinkle with chopped walnuts. so yummy

Big pasta salad
bagels,breads with cold cut spread an/or egg, tuna, chicken salad
green salad
cheese and crackers (or antipasti)
