Chili!! Instead of a bunch of tomato ingredients, I use Francesco Rinaldi and add all different spices. DH is picky but it's always a hit!!

Today's dinner was pretty easy. I spread a thin layer of pesto on salmon and sprinkled italian breadcrumbs on top. I baked it in the oven until the salmon cooked through. It turned out pretty good with a side of cous cous and Melissa d'Arabian's Simple and Satisfying Broccoli.

We always have sausage in the freezer b/c it defrosts so quickly, so our go-to meal is sausage, peppers and onions with Spanish rice.

ETA: recipe

Ingredients:

3 hot sausage and 3 sweet sausage links (or any combo you like)
1 bell pepper, any color, diced
1 medium yellow onion, diced
2 cloves chopped garlic, or 1 tsp garlic powder
1 28-oz can of crushed tomatoes
1 box Spanish-style rice (I prefer Rice a Roni or Goya)

Cook the rice according to package directions.

Heat a little oil over medium heat in a large pan and add the sausage. Brown on all sides and remove (you don't have to cook it all the way through). This should take about 10 minutes. Let cool a little so you can handle it, then slice it on an angle in 1-inch pieces.

While the sausage cools, add pepper and onions to the pan and saute until soft. Add garlic, a little salt, and pepper. Add sausage back into pan and saute until cooked through. Add rice and crushed tomatoes and heat through. Season to taste.

This is our all-time favorite dish, and it's so easy!

I add some garlic powder, kosher salt, fresh cracked black pepper, and some oregano to the pan of oil & garlic before I turn on the heat. I cook the garlic in the oil on low so that the garlic flavor comes out slowly into the oil and won't burn--once the garlic is burnt, forget it. After it cooks for a bit, I add in some pasta water (after I drain the pasta) or some chicken broth.

I add lots of locatelli pecorino romano cheese after I mix the oil in with the pasta...like a lottt lol. I LOVE it Chat Icon

My easy dishes are
tortellini with sauce - one pot too which makes for an easy clean up.

pasta with knorr's parma rosa sauce (sometimes with chicken)

some type of marinated chicken (teriaki sauce, honey teriaki, BBQ sauce) with salad, stuffing, as a sandwich, or even by itself. I am not too big on side dishes.
