Grilled shrimp skewers. Put them in a bag with minced garlic, lemon or lime juice, garlic and kosher salt. Let them sit for 30 minutes to 2 hours. Skewer them and grill them until cooked through.. maybe 7-10 minutes max?
Serve plain with grilled veg and roasted corn as a side.. or on a bed of rice or quinoa with a big green salad.

as PP said, shrimp scampi is really easy.
I LOVE this shrimp scampi recipe from Allrecipes.com. You can prep the dish in the 6 minutes that the oven takes to preheat!
Preheat the oven to 450.
Take a stick of butter (1/2 cup), a tbsp of djon mustard, juice from 1/2 lemon, 3 cloves chopped garlic, & handful of chopped flat-leaf parsley and heat in small saucepan over medium just until the butter melts.
Put 1 lb of shrimp (raw, peeled & deveined) and place into shallow baking dish (I use my pampered chef stoneware) and pour the butter mixture over the shrimp.
Bake for 12-15 minutes until shrimp are nicely pink and opaque.

grilled veggie salad - romaine, butter lettuce, tomato, grilled corn, grilled zucchini, grilled shrimp (chopped) and cubed avocado with a citrus vinaigrette sweetened with agave (or honey if you don't have it)
picy shrimp with corn & quesadillas (adapted from real simple)
* 3 ears fresh corn * 5 scallions, thinly sliced * 1 tsp. fresh thyme * kosher salt and pepper * 1 tbsp. chili powder * 1/4 tsp. cayenne pepper * 2 tbsp. olive oil * 1 lb. large shrimp, peeled and deveined * 1/2 cup Monterey Jack cheese, shredded * 2 large flour tortillas
Directions
1. Bring large pot of salted water to boil. Boil corn for 8-10 minutes. 2. Cut corn kernels from cobs. Combine them in bowl with scallions, thyme, 1/4 tsp. salt, and 1/8 tsp. pepper; set aside. 3. In medium bowl, combine chili powder, cayenne, oil, and 1/2 tsp. salt. Add shrimp and toss to coat. 4. Heat grill pan to medium and cook shrimp, turning once, until cooked through, about 4 minutes. 5. Meanwhile, sprinkle cheese over half of each tortilla. Fold in half and grill, turning once, until cheese melts and tortillas are crisp, about 2 minutes. Transfer quesadillas to cutting board and cut into wedges. 6. Divide shrimp and corn among plates and serve with quesadillas.

stuffed (my fav, but a little more work( oreganata (my other fav, easy!) scampi
skewers - garlic, lemonlike PP said or I even love our fav BBQ sauce, granulated garlic and black pepper... delish! OR sprinkle with cajun seasoning after brushing with EVOO and grill to.

These are super easy and so refreshing in the summer:
Seared Chipotle-Shrimp Tacos
2 teaspoons cumin seeds 1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon chipotle powder 1 teaspoon chili powder
1 1/4 pounds shrimp 1 1/2 cups shredded lettuce 1/2 cup chopped fresh cilantro 3 tablespoons lime juice
8 (5 inch) corn tortillas 1/2 cup diced tomato 1/2 cup tomatillo salsa 1/2 cup reduced-fat sour cream
1. Combine first 5 ingredients in a large bowl. Add shrimp; toss to coat. In a separate bowl, toss together lettuce, cilantro, and lime juice; cover and chill.
2. Heat a cast-iron grill pan or skillet over medium-high heat. Coat pan with cooking spray; add shrimp to pan and cook 3-4 mins. each side, or until just heated through if using pre-cooked shrimp.
3. Warm tortillas according to package directions. Divide shrimp evenly among tortillas. Top each tortilla with 1/4 lettuce mixture, 1 tablespoon diced tomato, 1 tablespoon tomatillo salsa, and 1 tablespoon sour cream; fold tortillas in half.
Yield: 4 servings of 2 tacos each
