Re: butter cream frosting?

This is my FAVORITE buttercream recipe ever. Not too sweet, but really creamy and delicious. It's almost light....

6 cups of confectioner's sugar
1 teaspoon clear vanilla
1/2 teaspoon salt

1 cup boiling water

2 3/4 cups Crisco
1 1/2 sticks unsalted butter

Mix confectioner's sugar, vanilla, and salt in the bowl of an electric mixer. Once combined, add boiling water. Scrape down the sides of the bowl to make sure all of the sugar mixture is in the water. Mix on slow until the bowl is cool to the touch. Add Crisco and butter and mix on medium speed until they're pretty broken down but not quite smooth (about 5-7 minutes). Turn the mixer to high and mix for 20 minutes.

Enjoy!!

Re: butter cream frosting?

Here's the recipe I've been using:

2 sticks unsalted butter
3-4 cups sifted confectioners sugar
1/4 teaspoon salt
1 tablespoon vanilla extract
up to 4 tablespoons milk

Beat butter for a few minutes with a mixer with the paddle attachment on medium speed. Add 3 cups powdered sugar and turn the mixer on the lowest speed until the sugar is incorporated. Increase the mixer speed to medium and add vanilla extract, salt and 2 tablespoons of milk, beat for 3 minutes. If your frosting needs to be thicker, add the rest of the sugar. If it needs to be thinner, add the rest of the milk.

I also have a recipe for a swiss meringue buttercream that is so yummy, but it required using uncooked egg whites and not everyone likes that. But it's SOOO good!
