2 cups monterey jack cheese, divided (or mixed cheddar, jack etc.)
1 cup salsa (i used hot)
2 green onions, chopped
1 (2 1/3 ounce) can sliced black olives (i used jalapenos because dh hates olives)

Were the chips on the bottom all soggy and mushy when you ate it?

Re: Fantastic Taco Casserole

I made this too on Monday! It was so good! I used a can of black beans in place of the refried beans and I used mostly pepper jack cheese.

when I made this and froze, I did not put the chips in until the end. I thought they were going to get soggy.

Re: Fantastic Taco Casserole

I feel like I did something wrong. I used corn chips (fritos vs tostitos) and they were sooooooggy. Could that be the difference? Also, when you brown the meat and add the taco seasoning with water....should I have drained the liquid before adding it to the casserole?? It was really good, but I would leave the chips off the bottom of the baking dish next time I make this (unless someone can figure out what I did wrong)Chat Icon

Re: Fantastic Taco Casserole

I made this last night for DH and I and it was so good! DH was so happy: "JUNK FOOD FOR DINNER!!!!"

Meanwhile he didn't know I used baked chips, low-fat cheese, and fat-free refried beans Chat Icon Chat Icon

Oh, and to keep it veggie-friendly, I used mashed-up Trader Joe's Meatless Meatballs instead of ground meat.

So easy to make - I didn't want to turn the oven on since it was so hot yesterday, so I just popped it in the toaster oven. Perfect!
