Fantastic Taco Casserole
I made this on Saturday!! Thanks Dperotti for sharing the recipe
Fantastic Taco Casserole
Ingredients: 7-9 Servings Size
1 lb ground beef (i used ground turkey) 1 (1 1/4 ounce) package taco seasoning (i used chipotle seasoning) 1 (15 ounce) can refried beans 2 cups monterey jack cheese, divided (or mixed cheddar, jack etc.) 1 cup salsa (i used hot) 2 green onions, chopped 1 (2 1/3 ounce) can sliced black olives (i used jalapenos because dh hates olives) 1 tomato, chopped 2 cups corn chips, coarsely crushed or chopped (i used tortilla chipa)
** 1-2 cups chopped cilantro (not in original recipe)
Directions: Prep Time: 20 mins
Total Time: 30 mins 1 Brown ground beef and drain. 2 Add taco seasoning and cook according to package directions, adding proper amount of water. 3 Put corn chips on bottom of 8x8" dish. 4 Cook refried beans on stove until hot. 5 Add 1 cup cheese and 1 cup salsa. Stir until combined. 6 Pour beans over corn chips in dish. 7 Add beef to top of beans. 8 Sprinkle remaining cheese over top. 9 Sprinkle green onions and black olives over cheese. 10 Bake in a 375 degree oven until the cheese is sufficiently melted. 11 Take out of oven and sprinkle chopped tomatoes & cilantro on top. Wait 1-2 minutes and then serve.

Were the chips on the bottom all soggy and mushy when you ate it?

not one bit
we did have leftovers last night and they were very soft. weird thing is dh liked it better that way
still tasted great soft

I made this too on Monday! It was so good! I used a can of black beans in place of the refried beans and I used mostly pepper jack cheese.

when I made this and froze, I did not put the chips in until the end. I thought they were going to get soggy.

I feel like I did something wrong. I used corn chips (fritos vs tostitos) and they were sooooooggy. Could that be the difference? Also, when you brown the meat and add the taco seasoning with water....should I have drained the liquid before adding it to the casserole?? It was really good, but I would leave the chips off the bottom of the baking dish next time I make this (unless someone can figure out what I did wrong)

I made this last night for DH and I and it was so good! DH was so happy: "JUNK FOOD FOR DINNER!!!!"
Meanwhile he didn't know I used baked chips, low-fat cheese, and fat-free refried beans
Oh, and to keep it veggie-friendly, I used mashed-up Trader Joe's Meatless Meatballs instead of ground meat.
So easy to make - I didn't want to turn the oven on since it was so hot yesterday, so I just popped it in the toaster oven. Perfect!
