Between truffles and cakepops- I'm hopeless!
I love baking and I have to say, I'm pretty good at making certain dishes.
Truffles and cakepops excluded!
I made cakepops awhile back and they came out okay. But dipping it in the chocolate was nearly impossible for me! The chocolate kept trying up, it was thick and messy.
Then yesterday I tried to make oreo truffles. I got the ghiradelli bakers chocolate chips. I first tried to melt them in the mirowave but it was just coming out thick and chunky Then I tried over the stove and it melted. But when I went to put the truffles in to coat it they wouldn't stay together and the chocolate was so thick it wouldn't coat nicely. I even used a slotted spoon, I tried a fork, regular tablespoon- nothing worked!
In the end, I improvised and lined a cake pan with the oreo/cheesecake mix. Then I spread the melted chocolate over it and topped it with oreo crumbs. I chilled it and then sliced it into small sqaures. I called them Oreo Cheesecake Bites. They taste great but I wanted to make truffles!
Help! What am I doing wrong?

Try adding a tablespoon of oil to the melted chocolate to smooth it out.

Sounds like you may be melting the chocolate on too high of heat which is making the chocolate seize. Adding a little oil or cream helps the chocolate stay nice and smooth and melting it on low heat and keeping it on low heat will keep it from seizing.

i microwave to melt my chocolate and never had the experience you describe except when I try to melt it all in one shot. I usually microwave in 30 second intervals. After each 30 seconds, I stir it. I repeat until it is all melted.

try melting the chocolate in a double boiler style just take a glass bowel and put it over a pot of simmering water and add a little cream that should work.

Definitely use a double boiler. You only want the water simmering, not boiling and you only need a bit of water.
If you have an actual double boiler that's great, otherwise use a bowl placed over a regular pot.
Use baker's squares or baking bars... not chips! They melt much better and come out glossier.
Don't add anything to the chocolate - it will dry much quicker that way once the truffles are dipped.
Also, you should freeze the truffles for at least an hour and just dip one at a time.

I have done trial and errors for a long long time to melt chocolate .. heres my perfected way:
I use ghiradelli (just the regular bars) I break them up into small pieces and put them in a microwave bowl. On 50% power I heat it for 1:15 minutes ... I take it out. Even when it looks like its not even melted I stir it .. put it back in 50% power and do it by 30 seconds .. take it out and stir it every time when the 30 seconds is done. Every time you put it back in make sure its at 50% power...

ITA with everyone about melting the chocolate except I actually like the baker's chips. But I don't like them microwaved. But if you do decide to microwave- 50% power and stir every 30 seconds until melted. Otherwise, the double boiler works best for me. I've never had to add cream or oil to smooth my chocolate, but it definitely sounds like the high heat is making the chocolate seize up. Also, make sure you're not getting ANY water into your melting chocolate- that will immediately make it seize up as well. Lastly, make sure you use enough icing to make the truffles stay together and keep them in the fridge over night! Good luck! I promise you can do it!
