Last night chicken dinner was a hit...Here's the recipe
DH said it was one of the best meals he's ever had and couldn't stop talking about the sauce! I served this with white rice and tostones (fried plantains). It was actually very easy to make despite all the steps. Peruvian Chicken with Aji Verde Sauce
Chicken Ingredients: 1 whole chicken ( I used a 3lb one) 4 oz beer (I used Corona) 1/4 cup white vinegar 1 lime 2 tsp cumin 2 tsp garlic powder 1 tsp dried oregano salt paprika (I used enough to given the chicken that orange color)
Aji Verde Ingredients: 2-3 jalapeños, seeded (I used one cause I don't like spicy food) 3 tbsp fresh cilantro 2 tbsp olive oil 1 clove garlic 1 tbsp white vinegar pinch cumin salt and pepper 2 tbsp fat free sour cream
CHICKEN: -Wash chicken and remove all fat. -Place in a large bowl and season generously with beer, vinegar, lime juice, salt, garlic powder, cumin and oregano. -Place in a large bag and marinate overnight. NEXT DAY: -Remove chicken from bag and discard liquid -Cut chicken in half and place both halves on a large oven safe baking dish, skin side up. -Sprinkle chicken with paprika and a little more garlic powder and salt -Bake at 425° for about 50 minutes, basting with the pan juices half way through. -To test for doneness, insert a meat thermometer into the thickest part of the chicken; the thermometer should read about 165°F.
SAUCE : Place all ingredients in a blender and puree until smooth. Serve over chicken

Yup thats where I found the recipe. I really LOVE her site. I love how she makes healthy versions of latin foods (among others). I've also tried her colombian steak with onions and tomatoes and it was delish...tastes just like my grandmas

DELICIOUS RECIPE!!! Thank you for sharing!
I made this tonight and it was out of this world!! I served with white rice and tostones and it is now one of our favs.
For anyone who has ever had the chicken from Pio Pio... it tastes just like it!

Dio you think it would be good with chicken parts? Skinless?
Also, somone needs to tell me how to make tostones or sauteed plantains.

The actual recipe includes directions on how to grill and that involves cutting the chicken into pieces... not sure about it being skinless though!
Recipe
Tostones are super easy to make!! My Dominican MIL taught me how to do it lol.
Just cut the green plantains into maybe 1.5 inch chunks and fry them on both sides... take them out of the pan and smash (I used the bottom of a bowl) and then fry again and salt them. They are not healthy by any means but sooooo yummy!
