How do you cook your kale?
I usually cook it down with olive oil and water, sometimes stock. My sister makes a great kale and potato dish.
Anyone have a good kale recipe or interesting way to cook it?!

Re: How do you cook your kale?
My favorite is Kale chips. Trim them and then toss with a little olive oil and sea salt and then I put them in the oven for about 15 minutes until they get crispy but not burnt. Delicious.

I like Kale Chip too, how do you keep them from getting limp if they are not eaten right away?

Re: How do you cook your kale?
toss it in olive oil and sea salt. arrange on a baking sheet and turn the oven to 350. Bake till it starts browing on the edges and is crispy. Add more sea salt if needed. Seems this is pretty common. It is super YUMMY! :)

Re: How do you cook your kale?
saute with garlic, olive oil, stock and a nice squeeze of lemon at the end!!!
I also stew it, similarly to the above, but with most stock and cannellini beans.

Re: How do you cook your kale?
I've never had Kale Chips..I am intrigued, I LOVE kale.
I usually sautee with olive oil and lots of garlic..S&P and then throw in canellini beans and/or some peeled tomatoes..made it last night actually without the tomatoes.
I will have to try these chips!

Re: How do you cook your kale?
We do kale chips as well. Soooo good!
We also cook it with garlic, salt and olive oil. My MIL grows kale in her yard so we eat a ton of it. She also makes a dish where she combines the kale with bread, eggs, garlic and potatoes and it is delish!

Re: How do you cook your kale?
this is my dh fav way to make it!!
Creamed Kale with Caramelized Shallots
Ingredients 3 tablespoons unsalted butter 3 tablespoons finely chopped Spanish onion 3 tablespoons all-purpose flour 3 cups milk, scalded Pinch freshly grated nutmeg Salt and freshly ground pepper 3 pounds kale, center stalk removed, and coarsely torn into pieces Caramelized Shallots, recipe follows
Directions Heat the butter in a medium saucepan over medium heat. Add the onions and cook until soft. Whisk in the flour and cook for 2 to 3 minutes, not allowing the mixture to obtain any color. Whisk in the warm milk and cook until thickened. Season with nutmeg and salt and pepper, to taste. Keep warm until ready to use.
Meanwhile, bring a medium pot of salted water to a boil. Add the kale and cook until tender, about 10 to 15 minutes. Drain in a colander and then return to pot. Add cream sauce and cook until flavors meld, about 2 minutes. Season with salt and pepper, to taste. Plate creamed kale and then top with Caramelized Shallots.
Caramelized Shallots:
6 tablespoons unsalted butter
2 tablespoons sugar
10 shallots, peeled and sliced, or 40 baby onions, peeled
Salt and freshly ground pepper
Melt the butter and sugar in a medium saucepan over medium heat. Add the shallots, season with salt and pepper, and cook until they begin to brown all over, about 10 minutes.
