Veggies Help

Just got DH to start trying veggies (yay)!

But I need other ways to make them becuase he is not ready to go the plain route yet.

any ideas?

Roast them in the oven w/ EVOO and garlic. A little lemon juice. Or add some italian salad dressing. Or go "Chinese" - you can buy some of the sauces and saute veges w/ sauce.

What has he tried? I also like the frozen vegs w/ sauces. Its amazing what you can get a kid (DH) to eat if it has cheese on it!

I love roasting and grilling them:

Roast:
broccoli/asapragus/cauliflower with garlic or chopped oniions, EVOO, black pepper, sometime I mix in breadcrumbs to change it up. i sprinkle parm on the broccoli sometimes, or other shredding cheese

grilled them with EVOO. garlic (or granulated garlic) and pepper. Sometime I add lemon juice too.

grilled mushrooms. peppers, onions...

Sauteed spinach with EVOO, garlic, pepper, nutmeg

the frozen ones with sauces are good too... they are perfect in a pinch!

I like doing candied carrots... you cook in the microwave, baby carrots (fresh or frozen) or sliced carrots (fresh or frozen) and then adding some honey and a spoonful of dark brown sugar. It tastes sooo good!

What about red and green peppers with a dipping sauce of some sort for him to dip them in?

Peanut butter filled celery sticks is great.

I like spaghetti squash with evoo and garlic.

For string beans and broccoli, I like them stir-fried with lemon and also some oil/garlic mixture.

mock mashed potatoes (made with cauliflower)
cauliflower au gratin
broccoli in garlic and evoo
slow cook green beans - with onion, bacon and chicken broth (slow cook for 90 minutes)
I love sauteing carrots, onions and spinach in EVOO too
