anyone have a good stuffed peppers recipe?

I made them for the 1st time last month and loosely followed this recipe:

I used fresh garlic and onion instead of powder and I also put tomato juice in the bottom of the dish. I also boiled the peppers (prior to stuffing) for 5-10 min to soften them up a little and I still felt like they were a little too crunchy when they came out of the oven. Ummmm....and I also added shredded mozzarella cheese to the mixture when I stuffed them.

I made these for DH and my parents and they all raved about them.

Jackie, I used this recipe: Good for you stuffed peppers except I also add onions in for some extra flavor. I use more than a jar of sauce too because we like alot (and some for the side).

These rock! And I know you are preggo but Athenos feta sold at the supermarket is pasturized...enjoy
