Boil a 2 cups of beef stock. Stir in 1 cup of uncooked white rice, bring back to boil, cover and reduce heat to low. Cook for 20 minutes.
Meanwhile - in a dutch oven - saute some chopped onion and minced garlic in a little bit of olive oil until the onions are soft and the garlic speaks.
Add a package of ground turkey - stirring and mixing until cooked nearly through. Stir in a few good shakes of Worcestershire Sauce. Add pepper. Stir in a good tablespoon of beef base (it's a beef flavored paste you can find in the market near the soups). Add 1 large can of Hunts Plain Tomato Sauce (not the spaghetti sauce) and heat through. Add cooked rice and a cup of frozen peas and a handful of grated Gruyere (or Italian mix.. whatever you like). Taste and add more beef base if you need more salt - more pepper if needed.
Clean Bell Peppers and put in an oven (no stuffing) at 350 degrees. And heat until they are almost the consistancy you prefer. If you like them soft - heat for longer. If you like them crisp.. heat for only a few moments.
Stir cooked rice into meat mixture and Pour some Hunts Sauce on the bottom of a large baking dish and arrange par cooked peppers in dish. Stuff with meat/rice mix, add some sauce over the stuffing and top with grated cheese. Cook in oven at 350 until cheese is melted.
That's it!
