How do you make roast beef?

I usually just sprinkle with salt, pepper and garlic powder. How long/ what temp. do you use? TIA!

I do the same, but I also quarter a couple onions and throw them in the bottom of the pan with some water to get a base for the gravy with the meat drippings.

I copied this from another poster......I made it a while back and it was perfect. This will continue to be my go-to roast beef recipe Chat Icon

I first season the roast with salt, pepper, paprika, oregano, garlic powder and onion powder then: (PRE) Heat oven to 450°F. Place eye of round beef roast in roaster or pan uncovered, after it has come to temp. Cook in oven for 20 minutes. Turn off heat. Do not open oven door! Let sit in oven for 20 minutes per pound. Perfect.

i do almost the same thing, except I preheat the oven to 500 for 10 minutes. put the roast in and turn heat down to 450 for 20 minutes (3lb roast/ or 7 min per lb). then do same thing as above poster. I was nervous the 1st time i tried it, that the meat wouldnt be cooked but it came perfectl. I rubbed the outside with gravy master, salt, pepper, onion & garlic - PERFECTION!

ETA: after i take the meat out of the oven, let it rest for another 20 minutes!

OK so if I have a 2 1/2 pound roast. Put it in for 20 minutes at the high temp then 50 more minutes for the 2 1/2 lbs. right?Chat Icon

I would put it in the oven at high temp for 16/17 minutes. Then turn the oven OFF and leave the roast in there for another hour - DON'T OPEN THE OVEN, the roast needs the heat to finish cooking!

So happy that someone posted this...always wanted to cook roast beef but never knew how... My dh will be happy... My question is is the inside red and juicy c if it is dry and tough my dh won't eat it

how done is the inside ?
DH doesn't like it to be too pink inside medium is more to his taste. I like mine rare.

I usually rub my eye round roast with a blend of olive oil, soy sauce, worcestershire, fresh garlic and paprika, put chopped carrots, onion and more garlic in the bottom of the pan.
Set it in a 325 oven for 22 minutes per pound, halfway thru add some water into the pan to make an au jus. Let it rest, then slice, pop DH's into the oven for two minutes to cook a little more.

It cooks pretty much to medium rare. DH and FIL (both huge beef eaters) were VERY happy with it. Tender and juicy, but not TOO rare Chat Icon

Agreed! Quite pink but the ends were more towards medium.
