What do you usually make with..
chicken breasts.
The possibilities are endless. I want to make something quick and easy. I am ruling out breaded chicken cutlets, chicken parm, chicken francaise and chicken piccata. Since I always make these. I don't want to cut them up into a salad either.
Anything else I can make??

sometimes i make cook the chicken breasts on the stove and then cut them up in slivers. i saute peppers and onions an dthen put it all together in a pyrex with some seasoning and lemon juice and toss it in the oven for a little. comes out delicious and its a nice light dish

Rojerono's Tuscan Chicken
Grill (or saute)them and put on focaccia bread with roasted red pepper spread and fresh mozzarella for a panini. I don't have a panini press so I put it in my cast iron skillet and place a full tea kettle on a dinner plate to weigh it down.
If I have the fat ones I boil them and then shred for chicken enchiladas
Chicken Cordon Bleu hero - grilled or sauteed, topped with thinly sliced ham and whatever cheese I have (provolone, asiago). Smear a ciabbatta hero with a mustard and butter mix, wrap in foil and heat in oven

I will often just put a little olive oil in a cast iron skillet and get it screaming hot. I season the breasts with salt, pepper, granulated garlic and maybe some onion powder. Then add a dollop of butter and sear the breasts for about a minute on either side. Add a few cloves of garlic and a few sprigs of either rosemary or thyme and throw it in the oven to finish cooking for 15 minutes. When the chicken is done you can remove the breasts and deglaze the pan with some chicken broth and a little white wine. Correct the seasoning and pour the pan sauce over the chicken. It is super quick, easy and tasty. Rob takes these as his lunch all week (without the pan sauce).

These are a favorite in our house too.
For sides - quinoa, cous-cous and rice are the favored starches. Broccoli and cauliflower are the most used sides with chicken breasts round here.

Copied from another post: I make baked chicken cutlets at least once a week. We'll eat it with ranch dressing or in a salad or something but I'm getting so tired of that. I want to find something to add to the breadcrumbs to spruce it up and make it more flavorful. Any suggestions? You can add:
Herbs de provence Basil Parsely Tarragon Lemon Pepper Poultry seasoning Rosemary Parmesan Crushed red pepper
Remember that you need to use more if its dried herbs; fresh herbs are more potent. either pesto or a red pepper spread Maybe some different season packs - fajita, taco mix w/ the breadcrumbs
ETA: My mom also just bakes w/ salad dressing - italian/cesear or BBQ sauce. Now she has a vidalia onion one that is really good.
Come to think of it - even some of the different salad dressing season packets would work well to i guess I like to grind down pretzels and use them instead of breadcrumbs. Try Snyders Pumpernickel Onion or HoneyMustard mmmmm when I bake the chix cutlets instead of using an egg batter.. i use oil and chopped garlic, then put it in breadcrumbs with parmesan cheese. Great idea - especially after a party when you have 15 bags of open chips!!! ________________________________________ I have a recipe that does this with bbq chips. You crush the bbq chips, coat the chicken in them and bake. Serve with bbq sauce. It is yummy!! instead of using egg use golds garlic duck sauce, sooooo good! Instead of egg I use Ken's Northern Italian Lite salad dressing. Then dip in breadcrumbs and bake in the oven.

ETA: We had pretzel chicken last night. Just used some honey mustard as the "egg wash". Then breaded w/ ground pretzels. DS (3) helped and LOVES making the pretzel breadcrumbs!

-marinate and Grill them -you can stuff them with anything, stovetop, spinach & cheese, veggies, herbs, your favorite anything! -chicken cacciatore -pulled chicken -cut them in pieces and make stir fry -cut into strip and make fajitas -wrap them in bacon and bake them -butterfly them and make milenase, francese, piccata, roll them with cheese, etc - parm crusted
