I used to decorate them for haagen dazs.
you need to have a very very cold freezer. we used a particular type of cream made by the Brill company, though you could probably use a regular whipped cream with some success.
my favorite way to decorate a cake is with fudge. you get a really nice coating.
the easiest way to decorate an ice cream cake is with a chocolate coating that goes from liquid to solid (think the dipped ice cream bars that HD makes). you coat the sides in cream, then go around the sides with piroutte cookies ( they should be a bit taller than the cake) and then pour the liquid chocolate over the top until it sets in a smooth hard crust. tie a ribbong around the cookies. done.
the cake process itself is not hard but time consuming. you need to give enough time for each layer to set and harden before you apply the last layer. then you need to give it time to reharden after you "dump" it out of the mold prior to decorating. you should start no later than 24 hours before you want to decorate.

Re: anyone ever make an ice cream cake?
Ophelia thank you for all the tips! My 3 yo asked for an ice cream cake that is wonder pets themed. So I was thinking about frosting chocolate covered cookies with W to look like the wonderpet logo
I like the idea for the cookies on the outside and then use chocolate shell for a smooth look. I know what you are talking about and I think they still sell that in the ice cream topping section...I I plan on starting it a 3 or 4 few days before I need it.
