meatload-too greasy
How do you make it where it doesnt get all greasy? Ive tried making meatloaf twice and although the second time came out better then the first it still was very greasy. Any ideas? what am I doing wrong?

Re: meatload-too greasy
Are you using a lean ground beef? The leaner the meat I would think would have less grease, no? I use a combo of pork, veal and beef or sometimes ground turkey which is definitely less fatty.

Use 85% lean 15% fat...I once used chuck meat and there was a puddle of oil...it has to be the meat your using.

Re: meatload-too greasy
my only guess as to why it's greasy would be because the meat isn't lean enough.

I also use a meatloaf pan that has an insert that keeps the meat from sitting in the fat

Re: meatload-too greasy
you can put it on a cooking rack inside of a baking dish so that the oil drips out.

Re: meatload-too greasy
When I started cooking meatloaf on a baking sheet instead of a pyrex meatloaf pan, mine stopped being so greasy.

Agreed. I always cook it on a baking sheet so that it isn't stuck baking in the grease. I've never had it come our greasy with any cut of meat I've used.

Re: meatload-too greasy
A leaner meat for sure. You can also try making it w/oatmeal instead of bread/bread crumbs - make's it a bit healthier and moister.

I use ground turkey and it's never been greasy at all. Is that an option for you?

Re: meatload-too greasy
I use 80/20 beef and half way through cooking, I drain the grease out. Then, when it is almost done, I drain it again. That way it is not sitting and soaking up the grease.

Re: meatload-too greasy
I've used everything from 80/20 ground beef, 93% lean, to ground turkey and I've never had a grease problem with my meatloaf. (I'm sure I have now jinxed myself) maybe it's the amount of breadcrumbs, eggs, and all the other stuff that goes into it.
