Cannoli filling
So I found a recipe online and it seems really simple. I did try and make it once and it was so gritty. I think it was because I used part skim ricotta and didn't drain it.
I can buy fresh whole milk ricotta which is very dry. Will this give me that creamy cannoli filling or is all cannoli filling a little gritty and I just ate the cannoli to fast to notice ?
I also found that some recipes prefer ricotta impastata but I won't be able to find that by me.
