what are your go-to recipes when entertaining?
I have to entertain for a crowd of about 25 this Wednesday and was wondering what everyone cooks.
I usually make salad, meatballs and lasagne but that's been overdone with this crowd so I need a new repertoire. TIA

I always make these yummy feta and spinach wontons. I always get so many complements on them! They take a little bit of time to prepare and then your kitchen smells for a while. But totally worth it.

I have a few 'go to's' for crowds - easy to make and easy on the wallet too
#1 Penne Ala Vodka a tray of Lemon Garlic chicken (chicken pieces, lots of chopped garlic, oil, lemon juice, peas - so easy and delicious) Salad Bread
#2 Pot of Meat Sauce w/ Macaroni Sauteed Broccoli Rabe or Escarole or Green Beans w/ lots of Garlic Bread Salad
#3 Chili or Tacos w/ all the fixins Tortillas with Salsa & Guacamole Rice & Beans Mexican Corn (corn with red bell pepper, lightly seasoned with chili powder & cumin) Corn Bread Salad
#4 Glazed Ham Mac and Cheese Carrots with butter or Roasted Asparagus w/ bread crumbs and parmegan Bread Salad
Hope that helps. I can think of a hundred things more if you need :)

Could you do a cocktail party? Lots of little apps, finger foods and dips?
Or get a hero and some side salads.......that's quick and easy.

Bone in Chicken Parts (legs, thighs, wings, breasts - cut the breasts into 2 or 3 pieces so they chicken pieces are all roughly the same size) - as much as you need. For 25 people I would say a family pack each of thighs & legs, a regular pack of wings and 6-8 breasts 1-1/2 to 2 Whole Heads of Garlic (not a clove a whole head), peeled and crushed 3-4 Fresh Lemons, Squeezed Salt, Pepper, Garlic Powder, Onion Powder, Parsley Flakes (or fresh chopped parsley) White wine (1/4 cup) Olive Oil Pam Frozen Peas
Spray a baking tin (or 2) with Pam. Lay out the chicken, skin side up, in a single layer. Season with Salt, Pepper, Garlic Powder, Onion Powder In a bowl, squeeze 2 lemons, add crushed garlic and some water (maybe 1/2 cup) & 1/4 cup white wine. Combine and add peas & parsley then pour over chicken. Cover with tin foil and bake at 350 for 1 hour. Uncover and drain juice into a small pot. Simmer juices for 10-15 minutes. Put chicken back in the oven uncovered (no liquid) for 10 minutes (or under the broiler for 3-5 minutes) to crisp up. Pour a little of the juice over the chicken and Serve with more Au Jus on the side * you could also add mushrooms if you like.
Make sure you test the chicken after 1 hour. Thighs should reach 180.
** You can make this the day before or earlier in the day if you have time. Just bring it up to temperature, then do the last few steps (simmer the juice, crisp the skin a bit) right before serving...

Penne ala vodka, garlic bread and cesaer salad.
breaded and baked chicken breast, mashed potatoes, steamed veggies and salad.
baked tilapia, brown rice, asparagus or roasted brussel sprouts
or a good ole' bbq!

1. As above - chili in a crock pot with all the fixin's - on the side - like a taco bar - a salad, corn bread, tortillas. I put out small bowls so people don't take as much at once. If they want more they can come back. 2. Baked Fresh Ham, salad, baked beans - starch of choice - I ususally do roasted red potatos, green beans or carrots
3. Baked Fresh Ham, several quiches - different flavors - some with meat, some with veggies, plain - easy to make ahead of time and just reheat - I also do the roasted potatos with this and a salad.
4. Anything in a crock pot - pulled pork, chicken catticiatore, etc. - with the chicken I would put out a big bowl of pasta with sauce and italian bread. With the pulled pork - rolls to make sandwiches, potato salad or cole slaw, and a salads with both.

I have done this a couple of times...
I make a platter of rice pilaf, get some rotisserie chicken and cut into quarters and lay them out on top of the rice.
Quick and easy..

Pulled pork sami's from the slow cooker?
Change up the lasagna - make a "Mexican Chicken Lasagna" - cook some chix w/ salsa, layer w/ soft taco shells, cheese, black beans....

Ribs in the crockpot. Cut them into 2 rib portions add one bottle of bbq sauce and cook for 8 hours.

-chicken parm with pasta -parm crusted chicken with penne ala vodka -crab cakes with pasta & pesto sauce -london broil or flank steak with twice baked potatoes -crab stuffed shrimp/tilapia with baked/mash potatoes or risotto -shrimp scampi over pasta -chicken francese w/ roasted potatoes
