if you're vegetarian... or ever need to cook for a vegeatarian...
try these enchiladas!! we're not vegetarian, but DH's coworker is. the other day his coworker brought in leftover enchildas for lunch, DH commented on how good they smelled, so the guy sent him the link to the recipe.
with the potatoes and beans, you don't miss the meat. we cheated and just used a jar of salsa verde instead of roasting the tomatillos and all that. the jarred salsa made it kind of spicy (because the salsa has jalapenos in it)... but still really good!!
