Potatoes

Can you please share how you prepare your potatoes? How do you season it?

I want to make roasted potatoes tonight just wanted to see how others prepare it?

I just usually cut up the potatoes in wedges and drizzle olive oil, sprinkle salt, pepper, rosemary and bake. Want to see other ways.

For Roasting wedges:

I put olive oil in a roasting pan with a lip and add a pinch of cornstarch, some paprika, salt, pepper and granulated garlic. Then I heat the oil in an oven at about 375.

Meanwhile I par-cook my potato wedges in the microwave for a few minutes – and dry any moisture off of them when they come out. Take the heated seasoned oil out of the oven and put the wedges in the oil.. turn to coat them. Add a couple of sprigs of rosemary to the pan and a few whole cloves of garlic.

Cook about 7-10 minutes then remove from oven, turn the potatoes and put them back in for another 10 minutes until golden brown and crispy outside.

Sometimes I will slice the potatoes into flat rounds and cook like that instead of wedges. They cook faster though.

Did you want other preparations or just roasting?

Packet Potatoes

1 sheet (18x24-inches) Reynolds Wrap® Release® Non-Stick Foil
1 small onion, thinly sliced
4 medium red potatoes, cut in bite–size pieces
2 tablespoons olive oil or vegetable oil
1 teaspoon seasoned salt
1/2 teaspoon dried dill weed (optional)
1/4 teaspoon pepper

PREHEAT oven to 450°F OR grill to medium-high.

CENTER onion on sheet of Reynolds Wrap Release Non-Stick Foil with non-stick (dull) side toward food. Layer potatoes evenly on top of onion. Drizzle with oil. Sprinkle with seasonings.

BRING up foil sides. Double fold top and ends to seal making one large foil packet, leaving room for heat circulation inside.

BAKE 30 to 35 minutes on a cookie sheet in oven OR GRILL 15 to 20 minutes in covered grill.

Crash Hot Potatoes are a hit in our house

We also love mashed potatoes. When I don't have gravy I'll make sure to do either some smashed garlic in the mash - or I'll load them with a little cheese, sour cream and chives (sometimes Bacon!) so they can stand on their own.

You can also do hashbrowns - which are easy favorites. Grate the potatoes, run them under COLD water and squeeze out as much moisture as possible, make a mix of salt and pepper with a pinch of flour and toss that with the taters. Put a shy half cup of oil in a skillet and get it hot. Then put the potatoes in until it is covering the bottom of the skillet. When the bottom gets nice and golden you can flip it over and cook the other side. This is especially good with applesauce.

Baked potatoes (sweet and regular) are huge favorites of my little ones. They like them with sour cream and a little butter. I wrap them in foil and put them on the grill or in the oven and they think it's the coolest thing to have their own little silver present on their plate. Sometimes we'll do twice baked boats too.. you make a baked potato.. a little underdone. Cut the top quarter off and scoop the insides into a bowl. Smash it with a little butter, a little evap milk and some cheese (or really anything you want) - then pipe it back into the potato shell and bake again until the top gets a little crispy.

Of course there are also latkes and Carolyn recently reminded me of my fondness for salt potatoes.. mmm...

Potatoes are awesome vehicles for everything.

me too.. BUT, sometime i sprinkle grated parm over my roasted potatoes!


other potatoes dishes we do:

au gratin (my fav!)
garlic mashed
mashed bake ( i add onion, cheese, etc to leftover mashed and bake with breadcrumbs on top)
home fries (yummy)
twice baked
regular baked (i do homefries with leftover baked)
