Re: Easy Fajita recipe?

I don't really have a recipe I kind of just wing it.

I use McCormick Fajita Seasoning Mix and rub it on chicken cutlets and grill in a grill pan. I save some seasoning mix and mix with olive oil and marinate sliced peppers and onions and mushrooms in for a bit. I cook veggies on a George Foreman grill bc they get really well done and soft (I usually do this earlier in week or day and then just reheat later on).

Then whatever tortillas you like, shredded cheese, taco sauce, sour cream, etc.

I like to serve it with Goya's black bean recipe on side of can and some rice.

I do chicken. I get the tenderloins and marinate them in some EVOO, lime juice, dash of red pepper flakes, cumin, and onion powder. Then I grill them on a grill pan.

Meanwhile, in a frying pan, I saute the veggies. In strips I cut up 1 red pepper, 1 green pepper, 1 yellow pepper and 1 large sweet onion. Sometimes I also like to do mushrooms. I saute this and when its done, and the chicken is done, I cut the chicken in half so its smaller strips and I mix it all together.

I warm up tortillas and serve with the chicken and veggies. i also serve it with these toppings to choose from: homemade guacamole, store-bought salsa, jalapenos, sour cream, lettuce, shredded cheddar cheese and red hot sauce.

Re: Easy Fajita recipe?

thin chicken breast cut tiny, sprinkle with Italian seasoning, saute with red, orange, yellow peppers, and onion until soft. Then add orange juice and a can of corn drained then simmer for about 20mins. Serve on corn tortias warmed (u warm them by putting it in a skillet over low heat- no oil). My neighbor gave me this recipe it's yummy!
