low fat meal ideas
my dr put me on a low fat diet I don't think I cook too unhealthy but my meals aren't the healthiest either. Any recipe recommendations for healthy meals? Preferably without cheese.

What do you normally cook? If you can give me a list of things you like, I'm sure there are ways to make those dishes healthier and if not, find similar dishes you'd like that are!

I make everything, sausage, chicken, pork, meatloaf, beef, fish. I know I'm safe with roasted chicken. I love turkey chili and it's usually my go to meal but I don't think I can have the spices anymore either.

Shrimp stir fry. I get frozen shrimp, a package of frozen pepper and onions, and cook it in Yoshida sauce then serve it over brown rice.

My trick is to add veggies to EVERYTHING
Example - the way I make chili is with a whole onion, a whole pepper, 2-3 carrots, chopped celery, diced tomatoes, and sometimes corn. It ends up being about 50% veggie and 50% meat/beans.
I am always dicing up carrots, peppers, zucchini and adding them to regular foods.
Another thing I do is grill up some chicken breasts and then use them on sandwiches, salads, etc. throughout the week.
Just watch how much oil you are putting into the pan when you cook.
Try baking, steaming, and grilling instead of sauteeing or frying.

General Tso's chicken: 1 jar mango peach salsa chicken tenders- plain ones broth
Take chicken tenders in cook in some broth,( poach it) drain but leave a little bit of broth in, add the salsa. Cook till heated thru. Serve over brown ice.
Sweet and sour sauce: 12 oz diet coke or pepsi 1 c ketchup
cook till slow boil, then let it cook for about 20 minutes on low, keep a careful watch on it. I use this w/ lean chop turkey meat that I season up a little it an make meatballs or stuffed peppers, it makes an excellent sweet and sour sauce. It is a WW recipe. If I think of anymore I will add it. Anything can really be modified, it just takes imagination- there is a good cookbook- "Eat what you want", it has some great recipes in it. Hope this helps.

I agree that you should just add vegetables to everything.
I generally use only lean ground turkey, lean ground chicken, and chicken breasts or tenderloins when cooking. It's the healthiest for you (except for some fishes probably).
If it calls for beef, use turkey or chicken instead.
Instead of olive oil use chicken stock for some things it works out really great.

try sparkpeople.com.. it free and gives you tons of different ideas. it will even plan your meals for the week.
good luck. i'm trying to watch what i eat too... its not easy. not sure if you like portobellos mushroooms.. they are delicious and filling... you can stuff them too.

This sounds really strange, but its quite good. Sorry no real measurments..
Ground Turkey w/ Green olives and Egg Noodles
Cook egg noodles (you can use the fat free ones). When they are about 1 minute from being done, drop in about 1/2 small/medium jar of green olives.
In separate pan/same time - brown off 1 package ground turkey w/ some grated onion and frozen mixed peppers (red/yellow/green) or just green...whatever...the food police aren't going to come get you.
When that's almost done if there is any fat you can drain it. Add in 2/3 bottle of fat free italian dressing.
Toss w/ egg noodles and olives.
Reheats well in microwave...never frozen/reheated.

Check out Reynold's Wrap website - they have a lot of dinners what you cook in foil packages.. the chicken/fish steam so there isn't a lot of oil.
Just watch out - they are also a bunch of cream soup recipes there.

first stay away from any pre mixed or pre made sauces/entrees. even if they don't have a lot of fat, they generally have a ton of sugar.
cook simply. use fresh/dried herbs, chicken and veggies broths.
almost everything we make is technically low fat. we use lean meats etc.
something like a roast chicken with potatoes and carrots is soul satisfying and low in fat.
marinara sauce meat sauce made with 90% lean ground beef is also good.
I actually prefer 92% lean ground beef over ground turkey b/c it's generally leaner.
you can cook chicken with the skin on to retain moisture and just remove it prior to eating.
eat more fish.
add fresh greens and salads to your diet.

I LOVEEEEEE this food blog, I have made so many things and they all have been great!
I "cook for health" as my DH says bake chicken cutlets over fried etc. . . whole wheat pasta vs. regular pasta.

I find with many things its easy replace ground beef with ground turkey or chicken. Like, chili, burgers, tacos, stuffed peppers, etc!
Do you like fish? garlic, lemon and EVOO are great on fish and a little EVOO is ok!
