These ones have been reccommended to me - we have not stayed yet though. but they get GREAT reviews on tripadvisor.
El Dorado Seaside Suites Excellence playa mujeras or rivera maya Dreams Tulum Zoetry resort secrets resorts (I think there are 3 in rivera maya)

Royal Hideaway is def the most high end. I've heard nothing but incredible things about it but it is $$. I got a sick deal at Secrets Capri a few months after the swine flu scare. I loved it there. Excellence is really good too - I've been to the one in the DR, but not Mexico.

I stayed at the Iberostar Grand Parisio and it was awesome!!! One of the best all inclusives in my opinion. But, the caviat is no kids (not sure if that is an issue for you)

This was where I went on my honeymoon. The place was amazing, but you need to stay in a casida suite.

we went here on our honeymoon...the pools were beautiful, the rooms nice, the food good... however there was no beach... I was really disappointed with that because the pictures on their web site made it look like a beach... but it was really a lagoon type thing... i really wanted a beach where I could just dig my feet into the sand...

We've gone to El Dorado Royale and Aventura Spa Palace. Both very different but loved them both!
