Can we talk heritage turkeys?
well, my thanksgiving just got a whole lot pricier.
dh has decided that we are no longer buying a traditional turkey. b/c of the way they are raised (to be so fat with breast meat that they can't walk...and can't even hump to mate. they have to be artificially inseminated-which I saw on Dirty jobs )
so, we found a place, $4/lb. I can't screw this bird up at that price.
do you do heritage turkey? or fresh turkey for that matter?
any tips? any differences you have noted.
$50 turkey needs to taste like filet mignon!

We really changed our view on poltry after watching the doc food inc. I was shocked at how chickens are bred. Stopped buying perdue and other supermarket brands after that. I have to say organic, farm raised birds are quite different. The taste is kind of gamey and there def isn't as much meat, but totally tasty.

You can buy a humanely raised turkey at Whole Foods and even TJ's. I would brine it. Use Apple cider, beer, broth etc. mixed with water.

we get one of those from the local poultry farm - a 'bourbon red'.
we use an apple cider brine and cook upside down at 500ºF for 30min and then 350ºF for the rest of the time (depending on its size)
(Al's in charge of the turkey)

Funny you should say something about this....
Today on Martha Stewart she is going over Heritage Turkeys.
She isn't my favorite, but it may be worth hearing what she has to say.
My brother is a chef and owns his own place and of course is open on Thanksgiving....he is using Heritage Turkeys from a local farmer, he claims they are the best

BJ's has Harvestland Organic, humanely raised, anti-biotic free turkeys for $.99 a pound.

I always get rave reviews on my turkeys.
I use Tyler Florences sage butter recipe:
Oven Roasted Turkey w/ Sage Butter
I rub the bird inside and out w/ the butter. I salt and pepper liberally.
I never stuff my turkey w/ traditional stuffing. I stuff w/ celery stalks, onions, sage leaves, lemons, garlic cloves.
Never had a bad bird! The white meat is as juicy as the dark!!

I always buy fresh, free range, organic turkeys. They are delish!!
I always brine and then used Martha's recipe (its basically just lots of butter and white wine). I also, per the recipe, soak a cheesecloth in the white wine mixture and drape it over the trukey.
I also start the cooking process with the bird breast side down. It make all the juices flow into the breast and make for an incredibly juicy breast meat. I, then flip it over towards the end to allow the breast to brown.

I do not brine. I know people who swear by it. The most popular brine is Alton Brown's:

do you know why you cook upside down?
its supposed to make for juicer breast meat. I should have mentioned, you flip it back over when you lower the temp. Its only upside down for the first 30 minutes.

Kings Park - Raleigh's Poultry Farm (though they don't raise turkeys, only chickens. They get the turkeys brought in from another farm)
