Eating healthy when life is hectic
How do you do it? DH and I are both retail managers so it's very rare that one or both of is home regularly to cook a meal. Schedules are always different one day to the next so I find myself buying alot of the "easy" stuff at the store (lean cuisines, frozen lasagnas, chips etc) things with alot of sodium and/or fat etc...
I tried to get away from proccessed foods but found that I'd have to get to the grocery store every 2-3 days to buy fresh and if I didn't eat something that day or the next, it would go bad. Wound up wasting alot of money.
I wish I had a more regular schedule so I could better deal with this
Any tips or suggestions how to eat a healthy diet when you are so busy?

I make a big salad that will last a few days.
You can also grill a few pieces of chicken to throw in there and get some protein in.

Me too. I also tend to buy spinach because it keeps longer it seems for some reason.
I try to cook a few things on the weekend too that will last me a few days that I can bring to work or heat up when I get home from work.

Always have things prepared. Trim or cut up meat before you freeze it, chop/slice vegetables ahead of time for the week. Or if you really don't want to buy fresh, buy frozen instead of canned. A nonstick wok or large fry pan is great - you can cut meat/fish into bite size pieces, and get a cup or two of veggies and cook it all up in about 15 minutes. It's quick, healthy, and easy to clean up. Plan out your menu for the week so you don't have to think about it On your days off, you can cook things and freeze them. The more prepared you are, the easier it is to eat healthy.

When life is really hectic, I start buying small portable snacks. I will get string cheeses, the pre-made hummus & carrot stick packs, bagged salad mixes, small fruit containers, etc. I will also make soup and freeze it in single serving sized containers so I can just take one out & go anywhere with it. I also make my own trail mix & bag that into portion sized baggies.
