I don't usually do this because I love a nice crispy skin and you just can't get that in a crockpot.

That being said, if I was going to crock pot it, I would probably prep it the same way I would in the oven.

Prepare a spice mix of herbs (any combo of fresh or dried: italian seasoning, thyme, oregano, rosemary, sage, herbs de provence, etc.), salt, garlic (or fresh) and onion powder, pepper. Mix in olive oil and then rub this mixture between the skin and the breast meat. I also rub it inside the cavity. Then i stuff the cavity with lemons, onions, and fresh garlic, more fresh herbs if I have them.

You can also do something similar with more of a cajun/spicy mix instead of herbs use chili powder, cajun seasoning, etc.

If I made in the crockpot, I would also put some carrots, onion, and celery around the outside to flavor the juices, that will make a nice chicken stock to make into either gravy or for soup with the leftovers. The carrots would probably be delish to eat, the other veggies I would prob just discard.

I would like to try this too, but what liquid do you add? Doesn't dry out?

Re: whole chicken in the crock pot?

I found this online and make it alot. Just becareful the chicken literally falls off the bone so be carful to remove the bones before eating:

--1 whole chicken, skinned (4-5 pounds)
--2 tsp kosher salt (if you'd like it as salty as the ones in the store, add another 1 tsp.)
--1 tsp paprika
--1 tsp onion powder
--1/2 tsp dried thyme
--1 tsp Italian seasoning
--1/2 tsp cayenne pepper
--1/2 tsp black pepper
--pinch of chili pepper (probably not necessary)

--4 whole garlic cloves (optional)
--1 yellow onion, quartered (optional)

The Directions.

I used a 6 quart crockpot for a 5 pound bird. It fit nicely.

Skin the chicken and get rid of the neck and other stuff from the cavity. This takes a while, and is gross. Keep small children away so you don't freak out about salmonella. I skin whole chickens because I hate the idea of the chicken fat simmering all day in the crock---it also looks disgusting when the chicken is cooked because it's all slimy and icky.

In a bowl, combine all of dried spices. Rub the spice mixture all over the bird, inside and out. Plop the bird breast-side down into the crockpot.

If desired, shove 4 whole garlic cloves and a quartered onion inside the bird.

Do not add water.

Cover and cook on high for 4-5 hours, or on low for 8. The meat is done when it is fully cooked and has reached desired tenderness. The longer you cook it, the more tender the meat.

Re: whole chicken in the crock pot?

I recently tried a whole one for the first time. I did it without the skin and would not do that again - it was sooooo dry.

I read that some people put balls of tin foil in the bottom so that the fat can drip down and the chicken isn't sitting in it and I think that I would try that but with leaving the skin on. I also saw another recipe that called for cranberry sauce to be put inbetween the skin and the meat and that sounded pretty interesting too.

Re: whole chicken in the crock pot?

i know this is almost a week old - but i wanted to share my "recipe"

I buy the America's Choice whole seasoned chicken from Pathmark or Waldbaums.
Put baby carrots and cut up red potatoes in the crock pot w/ the chicken and cook for 8 hrs on low.

The chicken is delicious & not dry at all.
