Anyone have a healthy meatloaf recipe?
I rarely, if ever cook meat. I need a healthy recipe for me, someone who likes to cook healthy and hardly eats red meat. DH loves red meat. Help!

I'm not sure if this will help you...
I make individual meatloaf. I'm not sure how they freeze but if they do, you can just make a big batch of mini meat loaf and freeze them then just pop one out for him and make yourself something else.

I use Ground Turkey: Sautee onions Sautee Garlic Portabello mushrroms and zucchini,
Put it in the ground turkey with worcestshire sauce, one beaten egg, salt and pepper and tyme.
Bake for 30 mins. Yummo!!!

Surprisingly, Paula Deen's recipe isn't bad. (I usually stay away from her recipes bc they are sooo unhealthy!) It uses oatmeal instead of breadcrumbs and tastes great. They also freeze well if you want to do that as the pp suggested.

i also use ground turkey. this is always delish; even DH looves it.
lb ground beef or turkey
1 box frozen spinach thawed; squeeze out extra water
1 large onion finely chopped in food processor
2 large peeled tomatoes chopped or small can of diced tomatoes not seasoned (Del Monte)
2 envelopes of Sazon Goya seasoning
1 cup of grated cheese (I prefer pecorino romano)
A pinch or so of paprika
Pepper
If no cheese, add salt
Bread crumbs, either seasoned or plain
Pre-heat oven to 400*
Mix everything, except bread crumbs, in a bowl
Put in 13 by 9 pan; flatten out into an oval shape and slightly raised in the center; try not to let meat extend to the edges of the pan
Sprinkle bread crumbs on top.
Cook for about one hour.
