Take 2 - morphing dinners
My co-worker was telling me about some leftovers she had and I thought a way to morph them into something different.
What are you favorite Take-2 ideas?

Co-worker (to be named later) had some leftover chicken that he had breaded w/ instant mashed potatoes.
I suggested that she make a chicken sheppard's pie w/ the chicken.
Add some mixed veges, cream of chix or cheddar cheese soup to the chix and top w/ mashed potatoes.

I'm so glad that my DH eats leftovers. I know so many people that won't eat them.
Sunday's roast beef and roasted potatoes leftovers became Tuesday's fritata, with a salad on the side.

My favorite is a whole roasted chicken followed by chicken chili from the leftovers! So good.
This week though, I used the leftover chicken to make a chicken stew with biscuits and even through in the leftover gravy. It was yummy but not as good as the chili.

Take 1 - London broil with roasted potatoed and veggie
Take 2 - sliced steak fajitas with rice

whole roasted chicken one night...
next night, one of the following:
-chicken quesadillas (with all the fixings)
-giant salad (any kind) topped with slices of chicken
-chicken, cheese & avocado panini or some other chicken panini
-shredded chicken tacos or enchiladas

leftover mashed potatoes:
1) mom's pototo pancakes/patties.. mix onion, garlic egg, pepper, cheese, etc into it bread and bake or fry. yUm
2) i do the above, but pour into baking dish and top with breadcrumbs and bake (faster than making all the little patties)
