Random ???...butter vs oil
I see a lot of recipes where people use both butter and olive oil, and I always thought it was unnecessary, redundant or too fatty. I don't think I ever use butter in cooking (obv I do for baking)...Thoughts?

but the combination is to help even out the burning points i think

Exactly. Olive oil has a higher burning point than butter (because of the milk solids I assume) so using a combination gives you the heat of oil with the flavour of buttah!

when I make broccoli garlic and oil I always add some butter . . . . I was a waitress for 10 years in HS and college and after the chef would add butter to some dished with oil - I think it give is a GREAT taste.

yes depends but both can really enhance flavor...
it is good combo for fish like scallops..helps to give it a nice crust

I use EVOO for everything (I even use it instead of butter in recipes that require butter).
For baking a use butter if it is required

I'm horrible and from the south, and put butter in *almost* everything I cook
I may get very clogged arteries by the time I'm 30...
