They are really easy and delicious roasted. Just toss with some olive oil, s&p and maybe dill. Roast about 20 minutes at 400 degrees.

I roast them and then add agave at the end.

I like sauteing them in a little butter with honey and a little curry powder.

peel and cut up and eat raw for a snack? I spend like 30 minutes every Sunday peeling and cutting carrots up for the week for DH and I. DH hates baby carrots!

Carrot Casserole.
Saute sweet onions with butter
add cream of celery soup
Cheddar cheese
salt and pepper to taste
and add to already cooked sliced carrots
put into a casserole dish
ontop put Pepbridge farm stuffing mix with melted butter.
Bake until bubbling YUM!!
