Easy Recipe for a Meatloaf
I'm definitely not a Betty Crocker, but I try to cook sometimes. I mostly cook chicken, which my DH is sick of.
Does anyone have a good, but easy recipe for a Meatloaf.

Brown Sugar Glazed Meatloaf
1/2 cup packed brown sugar 1/2 cup ketchup 1 1/2 pounds lean ground beef 3/4 cup milk 2 eggs 1 1/2 teaspoons salt 1/4 teaspoon ground black pepper 1 small onion, chopped 1/4 teaspoon ground ginger 3/4 cup finely crushed saltine cracker crumbs (I used whole wheat breadcrumbs)
Directions Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. I mix the ketchup and meatloaf together and pour over the meatloaf.
Bake in preheated oven for 1 hour or until juices are clear.

there is a super easy and good recipe on the back of the lipton onion soup packets. I make it sometimes and it is really good! I bake it with bbq sauce on top.
ETA: here is the recipe
Ingredients 1 Envelope Lipton Recipe Secrets Onion Soup Mix
2 lbs. Ground beef (or ground turkey)
3/4 cup Plain dry bread crumbs
2 Eggs
3/4 cup Water
1/3 cup Ketchup Preparation Preheat oven to 350 degrees
In large bowl, combine all ingredients
In 13 X 9 inch baking or roasting pan, shape into loaf (for best results, line pan with aluminum foil and use a non-stick cooking spray before adding meat loaf to pan)
Bake 1 hour or until done
Let stand 10 minutes

Mine is a combo of the above recipes.
I use the Lipton onion soup mix, worcestershire, garlic, parm cheese, egg, breadcrumbs, onion powder and then top with the ketchup/brown sugar glaze.

Paula Dean's recipe is my favorite! We had this last night.
Ingredients 1 pound ground beef 1 1/4 teaspoons salt 1/4 teaspoon ground black pepper 1/2 cup chopped onion 1/2 cup chopped bell pepper 1 egg, lightly beaten 8 ounces canned diced tomatoes with juice 1/2 cup quick-cooking oats
Topping: 1/3 cup ketchup 2 tablespoons brown sugar 1 tablespoon prepared mustard Directions Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.
Topping: Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Here's my Mom's Italian meatloaf...
1 lb. ground beef 1 egg 2/3 c. moistened seasoned breadcrumbs 3 heaping TBSP of parmesan or pecorino romano cheese 1 8oz. can of tomato sauce salt pepper
Preheat oven to 350. Combine beef, egg, breadcrumbs, cheese, salt, pepper, and 1/2 the can of tomato sauce. Mold into a loaf or put into a loaf pan. pour remainder of the tomato sauce over the meatloaf and coat. Cover and bake for 40 minutes.

I make this all the time bc it's healthy for my son too
-1 pound turkey chopmeat -half a can of corn (niblets) -Big hand full of fresh or frozen broccoli chopped into bits -1 egg -some breadcrumbs (handful) -some pec romano cheese (heaping tablespoon) -garlic powder to taste -Salt and Pepper to taste
Mix all the ingredients together really well *I use my hands*and prepare into a loaf and bake in the oven at about 375 for and hour or so
I'm so bad with measurements and timing bc I judge everything myself but this is really easy and if you add a little more or less of something it can't really go wrong.
The cheese,boccoli and corn give this loaf great flavor together. I do a similar one with mushrooms and asparagus but the sweetness of the corn makes this one so much better

This is the one I always make but I usually use meatloaf mix (veal, pork & beef) and put it in a loaf pan to bake. Sometimes I'll spread a little bbq sauce on the top for the last 15 min.
