Cooking for one

What do you cook when you are all by yourself? DH travels for work and I am home alone. I always end up eating tons of pasta and junk food, but I want to eat better. I should mention that I usually don't get home from work until 6:30pm most nights after picking DS up. I need quick easy meals that I can cook while DS watches me (his patience to watch is limited). The ability to share them with my 10-month old is a plus.

Honestly when it's just me I'll usually either skip eating or throw together a salad with some leftover chicken or steak. Or eggs.. a quick omelette or some scrambled eggs with a cup of yogurt and fruit is quick and not too bad for you!

Same! I will usually do a big salad since DH doesn't like salad as a meal. Otherwise an omelette with toast.

i eat a lot of salad, tuna, sandwiches, raw veggies when im home alone...
