You can do a version of sloppy joe or turkey chili or Mexican stuffed peppers or turkey tacos or turkey burgers topped with Monterey Jack and salsa or nachos.

How about...
mini turkey burgers w/ green salsa mixed in... cooked to med/med well.
top with cheese then wrap w/ pilsbury dough/break... bake...
ummm - wonder if 2 1/2 y/o would eat it if he helped....
Maybe I'll make 1/2 package turkey burgers and 1/2 package turkey chili.
what kind of beans/veges for the chili?

Maybe mexican style turkey burgers... add peppers, onion, garlic, pepper, chili poweder and even cilantro and top them with the salsa!
or turkey tacos!!
