Prosciutto and Melon ranks really high.. as do Strawberries with marscapone.. I like shrimp cocktail.. but I actually prefer it roasted and room temp a la Ina Garten.
I know it's not REALLY an appetizer, but I've seen it served as such - so I'll say my absolute favorite is sushi.
ETA: Guacamole and Pico with Chips. Ceviche..

Second prosciutto and melon. I also like hummus with anything. Veggies and dip, particularly that spinach dip in that brown bread bowl.

Cheese & Cracker Tray - Makes a pretty presentation on a platter
1. Water Crackers with Brie, Slivered Almonds and Fresh Raspberries
2. Whole Grain Crakers with Gorgonzola, Dried Apricots & Pecans
3. Ritz Crackers with Cheddar Cheese and Fresh Sliced Apples
another good combo is
Endive leaves with the gorgonzola, dried apricots and pecans.

Mexican Pinwheels
3 White Tortillas
Cream Cheese
Scallions, diced
Cheddar Cheese
Jalepeno Pepper, seeded and diced
Take one tortilla, spread cream cheese, scallions, and cheddar cheese across the entire tortilla. Place some jalepeno's down the center only. Roll up the tortilla tightly, then cut them into bite sized circles.

Cream Cheese Dip
1 8oz block of Cream Cheese
1 jar spicy mango chutney (or any other chutney you like)
Place cream cheese on platter, let it soften.
Pour Chutney over softened block
Serve with crackers (use a harder cracker like wheat thins or JJ Flats Crisps)
or
I've also had the cream cheese dip as follows
1 block of cream cheese
spread with a little horsradish and sprinkle some tobasco sauce around
cover with cocktail sauce
Serve with Shrimp cocktail
You get the kick from the spice but the cream cheese soothes the palet.

Good old sour cream and onion dip and chips!
Hummus with pita bread or chips
Fresh Mozz, basil, roasted peppers with balsamic vinaigrette.
pepparoni, cheese and crackers
OK IM HUNGRY!!!
