german recipes for oktoberfest!
we cook german all the time, however, i am planning a surprise 40th bday party / oktoberfest for my lovely husband.
i can't put my hands around recipes easy enough to cook ahead of time and reheat - aside from sauerbraten.
we will be putting 'brats and 'wursts on the grill (hot dogs and burgers too fot the non-germans).
any suggestions / recipes you can offer?
ETA- probably about 100 people.

German potato salad
Weisswurst (very Bavarian, but usually an earlier in the day meal)
Leberkaese (it's like German spam, but not bad like spam, I've never had it)
Pork Knuckles
Pretzels
Cabbage, white and red
Kaesespaetzle (Cheese Spaetzle)
Strudel
Knoedeln (like dumplings)
Mustard (a must)
Cheeses, Salamis, German Bread
Those are typical Bavarian foods, you could also add in other German foods, like Sauerbraten, Maultaschen, Beef Roulades etc.
ETA: oh yeah and Schnitzel.
Sorry, I don't have recipes for this stuff (I'm not really good at German cooking), but I'm sure you can find lots of this stuff in a German deli.

pork loin with spaetzle and red cabbage.
german potato salad is room temperature.
Leberkaese is great at room temp.
Kassler Rippchen with sauerkraut (smoked pork chops).
Jaegerschnitzel.
Platters of german cold cuts.
eta : Soft pretzels and beer !

Loin of pork with sauerkraut. Easy to cook and slice - goes a long way.

Sauerbraten, homemade potato dumplings, red cabbage, and rye bread. MMMMMMMMM!!!!!!
