I have The Fix it and Forget it Cookbook which seems to be the Slow Cooker 'bible' and has a ton of recipes

The crockpot website also has recipes that are foolproof.

I also have bought the McCormack packets of spices for beef stew- they tell you what other ingredients and how long to cook right on the package.

Have fun. I LOVE summer, but am getting excited for the cooler weather to use it again.

Re: slow cooker recipe ideas please!!

These are favorites of mine that I got off old threads on here:

Stuffed Peppers

4 large bell peppers (I used green but can use any color..green are cheaper!)
1 pound ground turkey OR lean beef
16 ounce jar of salsa
1 cup shredded mexican cheese
1 cup uncooked brown or white rice
1 cup tomato sauce
1 cup water
Salt & pepper to taste

Brown 1 pound of ground turkey or beef over skillet. Drain off fat. Add one 16 ounce jar of salsa, 1 cup shredded mexican cheese, 1 cup uncooked brown rice (can use white if desired) and stir well.

Take your 4 bell peppers and remove the tops and the seeds inside (pretty much clean out the pepper!).

Stuff the peppers with the turkey/beef mixture.

Mix 1 cup tomato sauce and 1 cup water together and pour into bottom of crockpot. Position peppers in crockpot.

Cover and cook either on low for 6 hours or high for 3 and a half hours.

**You can add more shredded cheese to the top of the peppers during the last 15 minutes of cooking if desired!!

Salsa Chicken

6 chicken cutlets, thin sliced
1 jar reduced fat cream of mushroom soup
1 packet taco seasoing
1 jar salsa
1 can diced tomatos with green chili (Rotel)
1/2 cup sour cream

Place chicken cutlets in bottom of crock pot and sprinkle with taco seasoning. In a large bowl combine all other ingredients. Pour over chicken and place on low 7-8 hours. Serve with rice or wrap in tortillas.

This makes an incredibly creamy shredded chicken mixture that you can eat by the bowl, wrap in tortillas or taco shells, or serve over rice with corn.

Chicken and Apples

2 apples peeled, cored and sliced into rings
1 onion sliced thinly
1 lb. boneless skinless chix cutlets sliced thin
1 can chicken broth
2 cans condensed cream of celery soup
2 TBSP rosemary or thyme
salt and pepper to taste

Layer the apples, on the bottom of the crockpot, then on top of that layer the onion, then ontop of that the chicken. Mix the condensed soup with the chicken broth, pour over layered ingredients, then add the rosemary ontop. Cook 4-6 hours.

Cranberry pot roast

I also add cut up red potatoes and whole baby carrots to the crock pot after an hour or so!

1 (1 ounce) envelope dry onion soup mix
1 (3 pound) beef chuck roast
1 (16 ounce) can jellied cranberry sauce
2 tablespoons butter
2 tablespoons all-purpose flour

..DIRECTIONS
1.Place onion soup mix in the bottom of a slow cooker. Place roast in the slow cooker, and top with cranberry sauce.
2.Cover, and cook 8 hours on Low.
3.Remove roast, and set aside. Set slow cooker to High. Whisk together butter and flour, and slowly mix into the liquid remaining in the slow cooker to create a thick gravy. Serve with the roast.

Re: slow cooker recipe ideas please!!

I made such an easy pulled pork in the slow cooker the other day...all you need is pork tenderloin or pork shoulder, 12 oz root beer and a bottle of bbq sauce (I used KC masterpiece)
-put pork in the slow cooker
-pour 12 oz of root beer on top
--cook for 8 hours on low
-put some bbq sauce in about halfway through...pork will fall apart with a fork!
-add in the rest of the bbq sauce at the end!
So good...leftovers tasted great too!
I also like the lipton recipe for pot roast...easy and delicious!
