Re: Pasta Salad

I've made a very simple one with fusilli, asparagus spears, cherry tomatoes (in halves) tossed in olive oil with salt and pepper to taste. It's simple but delish!

Re: Pasta Salad

I use Rotelle pasta.

I cut up:
cucumbers
broccoli spears
red pepper
orange or yellow pepper
carrots - cut very thin

I toss it all with Robusto Italian dressing and feta cheese. Mmmmm.

Re: Pasta Salad

I usually just mix together penne or spirals, italian dressing, fresh basil, fresh tomato and fresh mozzarella or a block of regular mozzarella cut into small cubes. Maybe add some sliced black olives too.

Honestly, I wouldn't go too crazy with the amount of servings. Maybe a pound, definitely not more than 2.

If this is an everyone-brings-a-dish get together you could end up with a TON of leftovers.

Re: Pasta Salad

since you have 35-40 people i would at least times this recipe by 3... i agree that other people will be prob bringing stuff though...

1 box whole wheat rotini

2 small zucchini (diced up small)

3 handfuls of grape tomatoes (or a small container, i had a huge container from BJ's).. sliced up

1 bag shredded mozzarella cheese

1 can chick peas

1 can black olives (pitted)

-i cook the pasta w/o salt drain it and rinse under cold water, i throw everything else in there and then top with olive oil, salt and black pepper (although i like to add some red pepper flakes for myself) and mix it all up. you can also do italian salad dressing instead of olive oil as a dressing.. it is yummy!
