Please help with Chicken Tikki Masala tonight!
The recipe says to cook the chicken on a "metal cooling rack over a foil lined baking sheet" and broil 5-7 minutes on each side. I don't think I have that! I mean I have those metal cookie cooling racks but that can't possibly be the same thing right? What would you use in it's place?

Do you have a broiler pan?
My toaster oven came with one... I just put that on the baking sheet (so that the chicken is lifted and the fat can drip from the cooling rack onto the baking sheet).

Thanks. The rack for my roasting pan won't work. My toaster oven came with a pan but it's not a grill pan. I am thinking I will just use the metal pan that we use to cook fish on the grill. It has holes in the bottom, so I will put that over a baking pan! I hope it comes out OK!!!

Did your toaster oven come with something like this? (the part on the right) because you could use that...

Did your toaster oven come with something like this? (the part on the right) because you could use that...

Nope! It came with the pan to the left but then the insert that goes in it just has holes in it and it's flat. I did end up using the metal cookie cooling rack instead of the BBQ pan.

It was really good. I did the rice with the peas the way you had posted a while back. DH didn't care for it, but his cousin and I enjoyed it. Do you know that was the very 1st time we ever had Indian food!! I can't wait to try the Tandoori or Chicken next!
