What to do with Turkey Sausage tonight!!
I usually do Turkey sausage and peppers but im tired of that!! No pasta though. Thanks for any input!!!

How about making a frittata?
Cook the turkey and let it cool. Slice it into small chunks.
Mix 6 eggs, some milk, a little tabasco and some snipped chives in a bowl.. like you are making an omelette or scrambled eggs.
Chop up a pepper and dice an onion into small pieces.
Shred some Provolone or Asiago.
I spray my cast iron pan and get it hot.
Put the veggies in the pan to let them sweat a bit, then remove. It's okay if a couple stick to the pan. Add the cooled turkey slices to the egg, stir in about half the provolone and then mix in the veggies. Pour the mixture into your pan and let it set. Do not stir. The edges will start to thicken and the bottom will set after a few minutes. Sprinkle the remaining provolone on top and pop it into an oven at 375. Let it sit in there until the whole thing is set.
Pull it out and slice it like a pie. the bottom gets browned and the inside is like an omelette.
You can use different veggies and cheese if you want - spinach, tomato, onion and feta might work well with the turkey sausage.
Serve with fruit salad and toast.. or with a house salad and dinner rolls.

my coworker gave me a great recipe for a sausage carbonara pasta... im sure you can sub turkey.. you take the the sausage out of the casing and crumble it and cook it and put it in a large skillet with a small can of tomato sauce, crushed tomatoes, and half a can of tomato paste, and some heavy cream (until the sauce is pink), and then you put it over rigatoni or whatever other pasta you like. it is really yummy!

love the frittata idea! - FYI, you can also do them individually, baked in muffin tins! I did that last week.
or - healthy main dish salad:
Cut about 4-5 roma tomatoes in half crosswise and thickly slice an onion (into big rings)... drizzle with EVOO and sprinkle on salt and pepper. Grill all of those, along with the sausage in your grill pan. The onions will need maybe 4-5 minutes/side, tomatoes maybe 2-3 minutes, sausages maybe 10 minutes total.
Take a bag or two of baby spinach (rinsed) or a few bunches of spinach (cut off the thick stems) and throw into a big salad bowl. When the sausages (slice when finished cooking), onions, tomatoes are ready (as each is ready) throw them on top of the spinach. You can ever cover it with a pan cover so that the heat stays in and wilts the spinach slightly.
While that's all going on... make the dressing. SUPER EASY!
Take 1 tbsp. of balsamic vinegar and whisk with 1 tbsp whole grain mustard & 3 tbsp. EVOO, then season to taste with salt and pepper.
It's really yummy!

If you have pizza dough (homemade is SO easy, I can give you a recipe if you want.. )
You can cook the sausage and slice it. Then shape the pizza dough into rounds and add sausage, shredded mozzarella, & some chopped broccoli... fold it over (so it's a calzone) and press the sides together to seal.
Brush a baking sheet with olive oil and put the calzones on. Bake at 425 for 35-30 minutes until they start to brown.
Lin, if you tell me what other ingredients you have on hand that would help!

You could also take the sausage out of the casing and just form them into small patties... you can make sliders that way!
Top with whatever you want
I love to do sliders on King's Hawaiian rolls! You can add sauteed pepper & onion, spinach, lettuce/tomato like a burger... whatever!

I just found this recipe going through Good Housekeeping: Yummy!! Sausage and pepper Kabobs .25 cup(s) olive oil 2 clove(s) garlic, crushed with press .5 teaspoon(s) dried oregano Salt and pepper 2 large (8 to 10 ounces each) onions 2 medium (4 to 6 ounces each) purple or green peppers 3 medium (4 to 6 ounces each) red peppers 2 pound(s) fully cooked kielbasa (smoked Polish sausage
If using bamboo skewers, soak skewers in cold water at least 30 minutes to prevent burning. Prepare outdoor grill for covered direct grilling on medium. In small bowl, combine oil, garlic, oregano, 1/8 teaspoon salt, and 1/8 teaspoon freshly ground black pepper. Let stand while you cut onions, peppers, and sausages into 1-in. chunks. Thread peppers, 2 at a time and alternating with onion and sausage, onto skewers. Brush skewers with oil mixture. Place on hot grill grate; cover and cook 10 to 12 minutes or until browned, turning occasionally. Place on platter to serve.

I just made turkey sausage last week - I grilled it, then sliced it up and put it on a whole wheat pizza crust from Trader Joes with some cheese and broccoli rabe...delicious!

Try slicing it up and cooking it in gingerale. The soda turns into a syrup and coats it. SO YUMMY!!!! I eat it over rice.
