Pizza dough Q

What kind of container do you put dough in to get it acclimated to the temp?

Basically, I buy dough, keep it in the frig (or freezer). I take it out and let it sit on the counter.

How long do you let it sit and in what kind of container?

Depends..if it comes in a bag, I just leave it in the bag...if it's refrigerated, about 20 mins.

I would think that if it were previously frozen, it would have to be defrosted first and then out on the counter for the same 20 mins. I guess if it weren't in a bag or any other kind of storage vessel, you could wrap it in plastic wrap or put the whole wrapped thing on a plate..hth

Ahhh, I usually take it out of the bag. Didn't think to leave it wrapped.

You can put it in a ceramic bowl with a towel over the top.

Coming from my DH the pizza man, you're "supposed" to oil it and put it in a bowl cover with seran wrap and a towel and let it sit on the counter to rise. If he's in a rush he puts it in the mircowave on the top shelf with a bowl of hot water on the bottom to make it rise faster.
