help!! trying to cook raw beans

ok, dh and i are trying to figure out how to make dry black beans from the package so we don't have to use cans anymore.

we followed the 'fast' directions on the package :add hot water, boil for a bit then let them sit for an hour. beans were not cooked.

they we tried the 'long'way, let them sit in water overnight. still beans not soft. help!!!Chat Icon Chat Icon Chat Icon Chat Icon

I don't soak them overnight. I just put them in the pot with water and bring it to a boil. Turn the heat down to low for about an hour. Then I add all the sofrito etc. and cook for another hour or so.

When I use dry beans, I let them sit in water for 6-8 hours or overnight. Then I drain them, refill the pot, and simmer them for about an hour and a half until they are soft.

I do it the long way--soak, and then boil, but I have heard you can use a pressure cooker to shorten cooking time.

I think the longer you soak, the less you have to cook.

OK DH and I tried to do the same thing except with red beans,,,,,are they not suppose to be soft after soaking them overnight?

STICKYDUST- can you share your recipe for black beans?

I'm so glad you asked this- I made them the supposedly quick way this weekend and it took 2 hours of boiling to get them to be edible Chat Icon

My mom was telling me on the phone today that you can boil them and then freeze them and they get lovely and tender.

I do like to soak them overnight and boil them for an hour. I always feel so accomplished when I use beans from dried!!

You need to cook them to get them soft, soaking just get the rehydrating process started. They should increase in size after soaking though. Your soaking water might also be too cold, or not enough.

I soak them overnight that way its only 20mins cooking time.

I love rice n beans, stewed beans, bean soup.... Chat Icon

my beans are always hard too, I have tried so many times and have just given up and gone back to cans.

I will try these tips - thanks for posting.
