I've had that happen to me. I've found that you have to spray the hell out of it before you put the batter in. After it cooks, let it sit for a while before you even think about touching it.
Also, when I eventually do flip it to get it out, before I flip it, I run a knife around the perimeter just in case.
Of course, when it does fall apart, i "glue" it back together with frosting

Re: How to make those giant cupcakes?!?!
Here's what I do for the cupcake pan cake...
1 box mix of cake. Prepare as directed on box. Spray pan, pour batter in and place in oven. I find that the top part needs less cooking than the bottom so about 35-40 mins in I actually take out the top piece and put the bottom in for another 20 mins or so. I haven't made it in a while but I think I usually bake the bottom for about an hour since it's so dense.

Re: How to make those giant cupcakes?!?!
I too find the bottom and top cook different, so I pour the bottom 1st and cook; then the top.
I also spray and lightly flour the pan and never had a problem.
