When you make soup, do you sautee the veggies in...
oil or butter?

i dont saute them. i put the veggies in raw.
eta: duh, im an idiot. very little olive oil.

Same! Unless it's mushrooms or something, in which case, very little oil typically.

When the recipe calls for sauteing veggies beforehand, I use olive oil.

it depends.
I always saute onions, garlic, celery, and carrots in olive oil before adding water or broth.
generally speaking, any additional veggie goes in raw...though I did saute the chard before adding it to my lentil soup on sunday....
