Cooking for my MIL on Thursday night.
I have NO idea what to make. It has to be something sort of easy since I work all day. It's her birthday though so I'd like it to be kind of special. Any ideas?
I could make something ahead and throw it in the oven when I get home. I'm open to suggestions.

Some Ideas to do ahead with easy things to add day of:
1. Homemade Macaroni & Meatballs, Garlic Bread, Salad (also lasagna or baked ziti)
2. Meatloaf, Gravy, buttered noodles with chives, boiled carrots, Salad
4. Chicken Cordon Blue, Rice Pilaf, Burnt Broccoli, Salald
5. Minestrone Soup (or any kind of soup that you can make ahead), Grilled Cheese (use a fancier cheese like guyerre, fontina, etc), roasted beet salad
6. Chicken Fajita's or Ground Meat Tacos (can make the meat ahead of time), cheese quesadillas, guacamole with tortilla's, Sangria

what about lasagna? always a crowd pleaser, and you can put it together and then just keep it in the fridge and pop it in oven when you get home.

Chicken Francaise, Rice Pilaf and Hayley's burnt broccoli makes a nice meal!
OR
Marinated and grilled steaks, Stuffed baked potatoes and Hayley's burnt broccoli
You can get some pizza dough from a pizza place, roll it onto a rectangular cookie sheet (greased) and brush it with olive oil and top it with garlic, thinly sliced onion and some rosemary for a nice herb focaccia to put in your bread basket.
Whatever you make.. make sure to plate it nicely - to me that is what takes a meal from nice to fantastic. Good plates, balanced colors and portions - garnish with fresh herbs.. put lemon or apple slices in a glass with ice water.

bulk sausage - browned, add 1 can petited diced tomatoes and a little chicken broth to make enough "sauce". Wilt in 1 9oz bag baby spinach Boil pasta (whole wheat penne or orichetta). Mix w/ sausage. Top w/ grated cheese - served w/ garlic bread
5 ingredients and its so simple and extremely tasty.

This sounds PERFECT! Straight up her alley. She actually orders something similar every time we go out for dinner.
I'm going to double the recipe. Should I use 2 lbs. of bulk sausage? Thanks so much!
Annndddd..it goes perfect with red wine. Her fav!

I don't really measure....
I get whatever the normal package of sausage is. If they don't have the bulk sausage, I get the links and take the cassings off.
I guess it depends if you like pasta, meat or veges. 1-1-1-1 is a good middle ground. When I make it with my mom we cut back on the pasta and double the spinach.
Maybe not for with your MIL, but I saw sausage ravioli once and used those - killed 2 birds with one stone. Tasted good but I like a little more sausage.

I made it and it was a HIT!!!!!!! Sooooo easy and sooooo delish!
