Spinach sauteed with lemon and butter.
and Lemon dressed cous cous
OR
Broiled cherry tomatoes tossed with garlicy green beans and some rice pilaf.

I would do roasted potatoes and any green veg (sauteed spinach or chard, roasted zucchini ..asparagus would work also but it's out of season..I'd go for a fall/winter veg)

I also do roasted red potatoes sprinkled with sea salt, EVOO and chopped chives and a green veg. Mmmmmm...
