how many sausages and peppers would I need to buy for two full trays?

My SIL is having a party and wants me to make sausage and peppers... there will be about 50 people - I figure two full trays. How many sausages and peppers should I buy in order to fill the trays?

i would buy one of those mega packs at costco or Shoprite has them too and use the whole pack. i dont know how many is in there. I just bought a pack today at shoprite they were on sale for like 1.79 lb the whole package cost me 6 bucks and there are at least 20 sausage in there. Good luck..

I don't know how much, because I am one of those people who always over-estimates and has too much But, I feel like when I make sausage and peppers I always need waaaaaay more peppers and onions than I think. The peppers cook down so much. I would get them at costco too.

Id buy 6 pkgs , I like the pinwheel sausage. You can get them @ johns , they are dirt cheep like $1.99 a pakg.
Id buy at least 8 - 10 peppers , mix, green red yellow & 3 onions,,

I'll just eyeball them and hope for the best.

Also - can I make it ahead of time and freeze it??
