Sausage & Potatoes Recipe

Mmmm! We had this last night, but I used Kielbasa. I use all different types of sausage. Because the potatoes take longer to cook I usually pre-cook them a little in the microwave first.

Cut potatoes in bite size pieces leaving skins on. You can use any type, however, I use the red skin. Cut one large onion in half and then slice length wise to make half-moon pieces.

After potatoes are semi-cooked from microwave put on cookie sheet, add onions, season with garlic powder, sea salt, fresh black pepper and paprika. Spinkle with olive oil and bake in 375 degree oven for about 45 minutes. Remove from oven and then add sausage and bake until sausage is browned and skin is crispy. I usually cut the sausage in bite size pieces to speed the cooking.

It is soooo yummy. I sometimes will add peppers and broccoli, too.

I cook the potatoes for 5-7 minutes. Check them after 5 minutes, if still a little hard I'll mic the additional 2 minutes.

I just realized something. If you are using raw sausages I would throw them in during step two (after microwaving potatoes) and let them cook with the potatoes and onions in the pan. You can always remove them if they become done before the potatoes and onions. Whereas, when I use Kielbasa I add them when the potatoes and brown and crispy because it doesn't take as long.
