You're having another couple over for dinner...
..What are you making?
Suggestions please... I'm so sick of cooking your typical chicken or steak or burgers or ziti.
Nothing too complicated or fancy, we've got picky eaters!
TIA

Re: You're having another couple over for dinner...
I have an AWESOME recipe for chicken scampi.
Serve with linguini. I also make a green veggie on the side. I'm weird - I will only eat fettucini or linguini with a green veggie. I can't eat it without it. I mean I can, but I don't like to.
I also posted an awesome honey chicken recipe on the Poultry swap thread. DH is the pickiest eater I ever did meet and he ate it.

I like the scampi ideas (chicken or shrimp).... mmmmm.

I usually make something super easy... something that requires little to no work on my end. For example, throwing a ham in the oven, throwing a chicken in the oven, throwing some steaks on the grill... all of those things are yummy, but I make them allll the time.

Reservations!
Seriously though, I'd do a nice grilled Salmon or Talapia with a cold pasta salad and spinach
OR
A grilled pork roast with fresh corn on the cob and a salad.
And ice cream sundaes for dessert!
Have fun!!

Re: You're having another couple over for dinner...
Tuscan chicken with rice and a big green salad.
Pork tenderloin with a Dijon rub, pan roasted potatoes and sugar snap peas and carrots.
Enchiladas - choice of chicken, beef or cheese.
Paella
Cornish game hens with a citrus glaze, wild rice stuffing and broccolini with lime and garlic.
Asian glazed salmon, sauteed spinach and brown rice with slivered almonds
Greek chicken skewers, lemon orzo pilaf and a cucumber and red onion salad.
Sliced steak with a madeira sauce, twiced baked potatoes and roasted asparagus spears with a tomato & mint salad.
All of these look and sound impressive but are super easy to make.
Serve on glass plates with a proper wine and sparkling water with a slice of kiwi, cucumber or lemon and you look like a gourmet.
Good luck

Re: You're having another couple over for dinner...
I've made a lemon chicken that was a crowd pleaser with fresh skin-on yukon mashed potatoes and creamed spinach...the chicken is a cinch...put salt and pepper on top...some butter under the skin and lemons in the cavity..squeeze lemon juice over the top and cook...moist and yummy!

Re: You're having another couple over for dinner...
our friends LOVE when we make homemade pizza with fresh tomatoes, mozzarella, basil and lots of garlic.
you can prepare the dough ahead of time and then just roll it out and top with a little extra virgin olive oil, shredded mozzarella cheese, sliced roma tomatoes, fresh chopped garlic, leaves of basil, and freshly grated parmesan cheese - it's delicious!
and chocolate molten cakes - they can also be prepared in advance and then they just take 9-12 minutes to bake once your guests are finished with dinner!
ETA: you can serve the pizza with a simple mixed greens salad

Thai Beef Salad for a starter Maybe a Thai Curry, or a Pad Thai Creme Brulee for pud, with maybe lemongrass or coconut in it.
I don't like Italian food...so I would go for Asian.

Re: You're having another couple over for dinner...
what about sauce with meatballs and sausage? I leave mine in the crockpot so I have all the time they're over to entertain my guests instead of cooking. Also a bonus, you don't need to turn the oven on and cook your guests. Unless your DH insists on making garlic bread like mine does.
