I made a Greek theme tonight and couscous was the side dish. I chopped up cucumber, tomatoes, red onions, olives, parsley and feta. I stirred it together with the couscous, added some lemon juice, salt and pepper. Really good.

I make a lunch salad with cous cous, canned chicken, black beans, cut up grapes, sun dried tomatoes and feta cheese mixed with balsamic vineger and a little olive oil.

I copy the couscous from Houston's. Mint, radishes, yellow raisins, almonds or macadamia nuts tossed in lemon and oil.

Re: Anyone have a Good Cous Cous recipe?
I've been working on different variations trying to find a great one.
so far, we've liked
parsely, scallions, red onion, dried cranberries, cucumber with a lemon and oil dressing.
I also did
grilled bellas, zucchini, onions, scallions, cucumber tossed with grilled chicken with a balsamic vinagrette
I feel like they both need more work (and ingredients) but they both are a good start.
it's hard, b/c I feel like it needs nuts but my dh is not a big fan of nuts in food.
