Guacamole Recipies?

I have an amazing and consistent one, courtesy of the Barefoot Contessa cookbook...EVERYONE loves it!
4 ripe Haas avocados (if they are not ripe-almost squishy, you can leave them in a paper bag and they will ripen) 3 tablespoons fresh lemon juice 8 dashes tabasco sauce (does not make it spicy) 1/2 small diced red onion 1 large garlic clove, minced 1 tsp. kosher salt 1 tsp fresh ground pepper 1 medium tomato, seeded and small diced
cut avocados in half, remove pits, scoop flesh into large bowl. immediately add lemons, tabasco, onion, garlic, salt and pepper and toss well. using a knife, cut the avocado down until finely diced add tomatoes at the end and salt and pepper to taste...I'm telling you, it's a hit! :) Enjoy!

mash 2 avocados very finely chop 1/2 onion 1 small tomato chopped very small squeeze of 1/2 lime salt and pepper mix it all together

Ingredients: Hass avocados (3), diced tomatoes ( small tomatoes) , white onion (1/4 diced), one lime, chopped cilantro (1/3 cup), 1 diced jalepeno, one diced garlic clove, salt and pepper to taste
In bowl, mash avocados adding lime juice to break down, add onion, cilantro, jalepeno, garlic and salt and pepper to taste, add diced tomatoes last (so they don't get too mashed). Have Fun!!!

mine is a little different b/c I HATE tomatoes in my guac.
I dont' have a formal recipe, it's very much to taste, so here goes
2 very ripe mexican haas avocados (have the best flavor) 1/4 finely minced onion 2 finely minced cloves of garlic a good handful of chopped fresh cilantro 1/2 jalapeno, finely minced (removed seeds and membrane for less kick) 1/2 lime, juiced salt to taste.
usually I mash the avodcado's to a good consistency, then add the above ingredients by halves and taste. i keep adding from the above piles until the ideal balance/flavor is achieved.
I don't think I get raves about anything more than I get about my guacamole....maybe my pre-preggo meat sauce but this guac is always a hit.

I do almost the EXACT same thing.. except I'm a little heavy handed with the garlic and I use a half of a red onion. I also use a little white pepper. I don't really measure so much... i just like to taste it as I go along!
Once my best friend's husband RUINED my guac by dumping friggin' SALSA in it because (without tasting it) he felt it must need tomatoes! And not even FRESH tomatoes or homemade salsa but a JAR of flipping TOSTITOS salsa! I wanted to murder his face.

Just be careful cutting the avocado! I ended up in the hospital with nine stitches after cutting an avocado!

this is what I do also, except I add tomatoes. Sometimes I sub tomatoes for radishes. comes out nice and crunchy.
we top with a mexican crumble cheese...not sure real name, we call it ranchero cheese.
