I have to post this brownie recipe!!
I have a subscription to Bon Appetite magazine and this month issues has all sorts of brownie recipes. I made this recipe and it is by far the best brownie I have ever had. If you prefer cakey brownies this isn't for you
Ingredients Nonstick spray 1/2 cup unsalted butter, diced 3 oz. unsweetened chocolate, chopped 1 1/2 cups sugar 3 large eggs 1 tablespoon instant espresso powder 1 1/2 teaspoons vanilla extract 1/4 teaspoon salt 3/4 cups all purpose flour
1.) Preheat oven to 325 degrees. Cover pan with foil completely and spray with nonstick spray.
2.) Stir butter and chocolate in heavy large saucepan over very low heat until chocolate is melted. Remove from heat; whisk in sugar, then eggs, 1 at a time. Whisk in espresso powder, vanilla and salt; sift flour over and stir to blend well. Transfer batter to prepared pan.
3.) Bake brownies until puffed and dry looking and tester inserted into center comes out with some moist batter attached, about 35 minutes; cool completely in pan on rack.
I happened to bake this in my convection toaster oven because my oven broke and we need to get it fixed. The pan size is 12x12x1in. and I baked it for 20 minutes and they were amazing.

Sounds good! Whenever I bake anything with chocolate, I substitute coffee for the water. The flavours really really are enhanced by the coffee.

This is so true. I can't believe the difference and you can't figure it out. I am thinking the acidity from the coffee does something to the chocolate.
